Louisiana Rice Dressing
½ Stick of butter
2 Tablespoons of olive oil
2 Large onions, chopped
3 Ribs celery, chopped
1 Bunch of shallots, chopped
1 lb Bulk pork sausage (Like Jimmy Dean mild, regular or hot depending on your taste)
Parsley
Garlic Powder
Kitchen Bouquet (maybe a teaspoon)
3-4 cups cooked rice
1 cup breadcrumbs
2 raw eggs
Salt
Black Pepper
Cayenne pepper
In a large pot, heat butter and olive oil. Add onions, celery and shallots. Saute. Add pork sausage and cook thoroughly. Add parsley, garlic powder and just a little Kitchen Bouquet. Gradually add cooked rice and mix thoroughly. Add breadcrumbs, eggs, salt and peppers to taste. Pace in a well buttered 1 ½ quart dish. Top with breadcrumbs; dot with butter. Bake at 350 degrees for 20 minutes or until hot. This is a great make-ahead dish that you can freeze. If frozen, defrost completely before heating and increase cooking time.
