Hearty breakfast in foil
Since breakfast is the most important meal of the day, especially if you have an active day ahead, take the time to cook yours with this easy recipe:
Ingredients: (Measure amounts for 1 serving)
- Diced potatoes
- 2 uncooked beaten eggs (for scrambling)
- Favorite sausage, cut into chunks
- Seasoning to taste
- Aluminum foil packet
Make sure your coal or wood fire is very hot. Place all ingredients inside the aluminum foil packet, securing on all sides. Place on coals or over a wood fire for approximately 15 minutes. Rotate at least one time to ensure even cooking.
Campfire macaroni and tuna lunch
If you get tired of sandwiches and want something warm in your tummy for lunch, try this simple recipe that even kids can make.
Ingredients: (Serves 2)
- 2 boxes of a favorite mac and cheese mix
- 2 cans "in water" tuna, drained
Boil a pot of water over your campfire. Follow box directions and boil macaroni until tender. Combine cheese packets with canned tuna in a bowl along with seasonings. Drain the noodles and combine with the cheese and tuna mixture.
Cowboy campfire dinner
Cowboys know that they need to refuel with a high protein, hearty meal at the end of an exhausting day.
Ingredients: (Serves 5)
- 1/2 pound bacon, cut into pieces
- 1 pound ground beef (chicken or turkey)
- 1 small yellow onion, diced
- Two 15-ounce cans favorite baked beans
- 1/3 cup zesty barbecue sauce
- 7.5-ounce package biscuit dough, cut into serving chunks
- In a large skillet or other pan, cook the bacon until browned over hot coals or on a grill over a wood fire. As the bacon is done, set it aside, leaving the pan drippings.
- Soften the chopped onions by heating in the bacon grease.
- Add the ground meat and cook until done (when no pink meat is visible).
- Stir in the remaining ingredients, including the bacon (except for the dough). Bring to a boil.
- Place the pieces of biscuit dough over the top forming a single layer. Cover and allow the mixture to simmer about 10 minutes until the biscuits are done.
Toasty dessert s'mores
Everyone's favorite campfire dessert is super easy to make.
Ingredients: (Serves 1)
- 1 marshmallow
- 1 large graham cracker sheet
- 1.5-ounce piece (sheet) dark or milk chocolate
Toast the marshmallow on a stick over a wood flame until lightly browned and soft inside. Break the cracker sheet in half and sandwich the piece of chocolate in between. Smash the marshmallow on top. Allow to cool before eating.
With a little effort you can make delicious food that tastes even better when cooked over a hot wood fire in the great outdoors.
