PECAN-CRUSTED WALLEYE


This recipe works with any mild white fish including catfish or Dover Sole.  Try this recipe for your next dinner party – your guests will love it! And so will you!  If you have a favorite seasoning mix for seafood, use it instead of the spices below for a unique flavor all your own!

 

4 walleye filets

1 lemon

1 ½ cups pecans

½ cup seasoned flour – try Krusteaz seasoned coating mix or simply use ½ cup flour seasoned with sea salt and pepper

 

1 tsp. paprika

1 tsp. red pepper

1 tsp. garlic powder

1 tsp. onion powder

Extra Virgin Olive Oil

Cooking spray

 

Cut lemon in half and squeeze lemon juice over walleye filets – set aside.

Grind pecans in food processor until the pecans are evenly chopped.  Place in bowl and add seasoned flour or coating mix.

 

Combine paprika, pepper, garlic and onion powders and mix well – sprinkle over fish.  Add remaining spices to the pecan mixture and stir well. 

 

Heat skillet to medium heat and add olive oil to just coat the bottom of the pan – coat the top of the walleye filets in pecan mixture and place top side down in skillet.  Cook for approximately 2-3 minutes and turn over using a spatula or tongs.  Cook about another minute and place on cookie sheet that is lightly coated with cooking spray. 

 

Bake at 375 for 18 minutes!  Enjoy!
