Chicken Breast Roll-Ups 

4 chicken breasts – boneless, skinless – pound thin
Pesto – 1 tablespoon for each chicken breast
Feta – 1 tablespoon for each chicken breast
Seasoned whole-grain flour
Juice of one lemon
Grey salt
Pepper to taste
Extra-Virgin Olive Oil

Pound each chicken breast in a baggie or between 2 pieces of wax paper.  Season with grey salt (like sea salt) and pepper.  Spread pesto on each chicken breast and sprinkle feta on top of pesto.  Roll up and secure with large toothpicks.  Set Aside.

Pour lemon juice into a small dish and seasoned whole-grain flour in another dish. Preheat large skillet with olive oil on medium heat and preheat oven at 375 degrees.  Dip chicken breast in lemon juice and coat in flour.  Cook in skillet about 2 minutes on each side.  Place on cookie sheet and bake for 15 minutes at 375 degrees. 

Serve with whole grains, like wild or brown rice and salad for a delicious meal – great for company too!
