Quick Sauteed VEGETABLES
It has been a challenge for me to get my husband to enjoy vegetables with dinner so I came up with this recipe to disguise the vegetable's flavor. I bet your whole family will love these vegetables sautéed in a zingy teriyaki and vinegar sauce. Experiment with other fresh vegetables!
1 zucchini – cut into chunks
1 yellow squash – cut into chunks
1 green onion – chopped
¼ cup red wine vinegar or balsamic vinegar
1 tablespoon low sodium teriyaki sauce
1 tablespoon olive oil
In a non-stick skillet, heat olive oil over medium heat – add vegetables and cook for at least 1-2 minutes. Add vinegar and teriyaki sauce and toss well to heat through for another 4-5 minutes. Serve immediately.
