October Recipes
We have two great Autumn themed recipes for you this month from "The Gooseberry Patch: Celebrate Fall" cookbook.
More often than not, trips to the apple orchard yield more apples than appetite. This recipe will help you put some of those fresh apples to good use!
Pork Cutlets with Spiced Apples

3 apples, cored and sliced
1/3 c. lemon juice
12 boneless pork loin cutlets, 1/4" thick
2 T. butter
1 T. olive oil
2 oz. fresh ginger, cut into julienne strips
1/2 t. dried thyme, crushed
salt and pepper to taste
Toss apples with lemon juice. Cook pork in hot butter and oil for 5 minutes. Add apples, ginger and thyme. Turn pork and cook 4 minutes longer. Add 1 tablespoon water, cover and simmer on low heat 5 minutes. Season with salt and pepper.
You know it is Fall when you smell this delicious treat coming from the kitchen!
Frightfully Good Pumpkin Bread

3 c. flour
1-1/2 c. sugar
1-1/2 t. cinnamon
1 t. soda
1 t. salt
3/4 t. nutmeg
3/4 t. cloves, ground
1/2 t. baking powder
3 eggs
1 c. vegetable oil
16-oz. can pumpkin
1 c. golden seedless raisins
1/2 c. walnuts, chopped
Preheat oven to 350. Grease and flour two 8-1/2" x 4-1/2" loaf pans. Combine flour, sugar, cinnamon, soda, salt, nutmeg, cloves and baking powder in large bowl and mix. In medium bowl, beat eggs, oil and pumpkin until blended. Stir pumpkin mixture into flour mixture until flour is moistened. Stir in raisins and walnuts. Pour into loaf pans and bake 75 minutes, or until inserted toothpick comes out clean. Cool in pans 10 minutes, then turn onto wire rack to cool completely.

October Decorating Tip
Harvest time is a great time of year to add a little color to your home before the gray winter months. There are many other options besides the well placed pumpkin or gourd around the house. You can make a great wreath or centerpiece from autumn leaves. Collect an assortment of colorful leaves after they've fallen. Carefully wash them. Dip your leaves in melted cake parafin and let them dry thoughly. The parafin will preserve the leaves and they should last for a long time. The leaves can then be arranged in whatever pattern you choose and tied together with thread or wire. Not that creative?
