Grilled Chicken Cobb Salad w/Peppercorn Dressing

3 or 4 chicken breasts, grilled and cubed
1/2 c. blue cheese, crumbled
1/2 c. tomatoes, diced
1/2 c. avocado, diced
1/2 c. bacon, cooked, drained & crumbled
1/2 c. hard-boiled eggs, diced
12 asparagus spears, blanched
6 c. lettuce (Romaine & red tip look beautiful)

Dressing:
1 1/2 c. light mayonnaise
1 1/2 c. sour cream
4 T. black pepper, freshly cracked
1 T. lemon juice
3/4 c. parmesan cheese, grated
1 c. water
1 T. fresh garlic, minced
salt to taste

Arrange chicken, blue cheese, tomato, avocado, bacon, eggs and asparagus on a platter lined with lettuce. In mixing bowl, whisk together dressing ingredients; mix well and spoon over salad.

Raspberry Sorbet

2 c. sugar
1 c. water
3 pints fresh raspberries
4 T. fresh lemon juice
fresh whole raspberries for garnish

Combine sugar and water in a small saucepan and simmer over medium heat for 5 minutes. Set aside to cool. Place raspberries, cooled syrup and lemon juice in a blender and puree. Strain and refrigerate. Freeze in an ice cream machine, or in the freezer, stirring every so often until soft-frozen.
