We’re serving up some great summer recipes from The Gooseberry Patch this month! Great for the Kitchen or the grill, these dishes will be sure to satisfy even the heartiest summer appetite!

Summertime Chicken

1-1/2 c. vegetable broth
2 T. Worcestershire sauce
1-1/2 t. hot pepper sauce
1 t. cayenne pepper
1 t. pepper
2-1/2 lbs. skinless chicken breasts

Combine broth and seasonings in a shallow baking dish. Mix well. Add chicken breasts, cover and refrigerate for one hour. Lightly spray frying pan with non-stick spray and add chicken breasts with one-half of the marinade. Simmer 30 minutes, or until juices run clear. Makes 6 servings.

Baked Corn

2 eggs, beaten
1 c. sour cream
15-oz. can creamed corn
15-1/4 oz. can corn
7-oz. pkg. corn muffin mix
1/2 c. butter, melted

Combine eggs and sour cream together; add creamed corn and corn, mixing well. Stir in muffin mix; add butter. Bake at 350 degrees in a lightly greased 8” x 8” baking dish for 35 to 45 minutes. Makes 12 servings.
