We’ve got some great summertime recipes from the Gooseberry Patch for you! These recipes will be great for that Fourth of July cookout or any summer get together!

German Potato Salad

4 to 5 lbs. potatoes
1 lb. bacon, diced
1 med. onion, diced
1 c. plus 1/4 water, divided
1 c. sugar
2/3 c. white vinegar
1 T. cornstarch

Boil potatoes until tender. Cool slightly, peel and slice into bite-size pieces. Fry bacon until nearly crisp, add onion and continue to cook until bacon is crisp and onion is tender; remove from saucepan. Drain all but 1/4 cup drippings from saucepan; set aside. In a small bowl, combine one-cup water, sugar and vinegar. Add reserved drippings in skillet; heat to boiling. Combine 1/4 cup water with cornstarch, mixing well, blend into sugar mixture. Cook until thick, stir in potatoes, bacon and onion; mix well.

Creamy Frozen Salad

2 c. sour cream
2 T. lemon juice
3/4 c. sugar
1 banana, mashed
1/2 t. salt
9-oz can crushed pineapple
1/4 c maraschino cherries, chopped and drained

Blend sour cream, lemon juice and sugar; add banana. Stir in the remaining ingredients. Pour into a mold or muffin tins for individual servings. Place in freezer until frozen. Dip mold in warm water to loosen salad.

3 c. all-purpose flour
1 t. baking soda
1 t. baking powder
1 t. salt
1 c. sugar
1/2 c. butter, softened
2 eggs
1 c. buttermilk
1 c. whole-berry cranberry sauce
1 c. blueberries

Combine flour, baking soda, baking powder and salt; set aside. Cream sugar and butter together in a large mixing bowl; blend in eggs and buttermilk. Add flour mixture; mix well. Stir in cranberry sauce and blueberries; pour into a greased 9” x 5” loaf pan. Bake at 375 degrees for one hour and 10 minutes or until a toothpick inserted in the center comes out clean. Remove from pan; cool on a wire rack. Makes eight servings.
