When most people think of a salad, they imagine a small bowl of wilted green lettuce drenched in fatty dressing, but the actual definition of a salad is broader than that and holds many more possibilities than itís given credit for. This season, spice up your meals with a tasty summer salad that mixes sweet and savory toppings to go beyond simple lettuce and dressing.

While summer salads offer limitless combinations to incorporate whatever unique ingredients you want to experiment with, itís probably important to make food that the picky eaters in your family will like. Summer melon salad

Who doesnít love a fresh fruit salad? This is a great way to put some sweetness in a meal while getting your kids to eat healthily. Picky eaters may find this melon salad adventurous, but the fruit and bacon are sure to win them over.

Grab a large serving plate and cover it with a half-cup of reduced fat Greek yogurt. Then, combine the following ingredients in a medium bowl with a whisk:

  • 2 teaspoons of honey

  • 2 teaspoons of fresh lime juice

  • 1 teaspoon of white balsamic vinegar

  • 1 tablespoon of extra-virgin olive oil

  • Dashes of kosher salt, ground black pepper and crushed red pepper

Toss two cups of combined honeydew, watermelon and cantaloupe balls along with one thinly-sliced cherry radish into the concoction. Drain the mixture, reserving the vinegar solution for later. Pile the ingredients on the yogurt dish, then drizzle some of the vinegar mixture over it, sprinkling cooked bacon crumbles and small basil leaves over it.

Herby cucumber salad

Itís important to have a go-to cucumber salad recipe in your arsenal, and this dish is a safe, comfortable option that your family wonít complain about.

Blend the following ingredients in a food processor until the mixture is smooth:

  • 2 tablespoons of lemon juice

  • ľ cup of plain yogurt

  • 2 teaspoons of Dijon mustard

  • 1 garlic clove

  • 1Ĺ teaspoons of chopped mint

  • 1 tablespoon of chopped parsley

  • 2 tablespoons of chopped dill

  • 1 tablespoon of olive oil

  • ľ teaspoon salt

  • ľ teaspoon sugar

  • ľ ground black pepper

Julienne three medium cucumbers and slice two medium red onions; stir them together in a bowl with the yogurt mixture, then serve. Feel free to adjust the sauce-to-vegetable ratio as desired.

Lemony grilled potato salad

Thick, heavy potato salads are an overrated member of many summer picnics; here is a great way to lighten up the age-old dish and give it new life.

Boil two pounds of small Yukon gold potatoes in a saucepan until tender, then cut them in half, let them cool and toss them in olive oil. Lightly coat thick-sliced red onions and red peppers with olive oil and put all the ingredients on a grill rack, grilling them for five minutes on each side at medium-high heat. Finally, slice these items into smaller pieces and mix them in a bowl with fresh basil, chives, lemon juice, capers, salt and ground pepper.
