With barbecue season upon us, it is always great to spend time with family and friends on the weekend cooking on the grill. One of the most important preparation points is to season your ingredients before placing them on the grill. I like to use marinades and rubs to bring out the best flavors in the food. Here are two of my favorite enhancers that can be used the next time that you barbecue.

Miso Marinade for Salmon

bulletA Recipe from Chef Daniel Bruce — Yields 10 Servings

Ingredients
½ Cup Soy Sauce
¼ Cup Miso Paste
¼ Cup Rice Wine Vinegar
2 Tbs. Honey
4 Tbs. Sesame Oil
1 Tsp. Chili Paste
Procedure
In bowl combine all ingredients and whip until smooth.
Cover 10 5 oz. salmon fillets and toss lightly until evenly coated.
Refrigerate for 4 hours before grilling.

It is with great pride that I write to you as the new Director of Wine for the Boston Harbor Hotel and Sommelier for Meritage, the hotel's Forbes Four Star restaurant. I am excited to share my passion for wine and food which was cultivated while living in San Francisco, studying with Master Sommeliers and volunteering at various wineries. I was fortunate to work this past harvest in France, and my travels have also taken me through wineries in Spain, California and Oregon.

I recently attended Oregon Pinot Camp and am delighted to be pouring their sparkling wines and vibrant whites for the summer. One of my favorites is the 2007 Argyle Blanc de Blancs which has delicious notes of pear, citrus and honey. This is a one of a kind wine because, outside of Champagne, it is the word’s only single block, single vineyard derived vintage blanc de blancs. We are one of the only restaurants in Boston to serve it, so please come by Meritage for a taste of these beautiful bubbles.

I also love the 2009 Elk Cove Pinot Gris for the summer. This wine has mouthwatering notes of juicy melon, grapefruit and peach and has a wonderful richness to it. It is balanced with vibrant acidity, making it a perfect wine to drink on its own or with a variety of food such as our Cornmeal Crusted Soft Shelled Crab with Sweet Corn and Smokey Tomato.

Chef Daniel Bruce and sommelier Betsy Ross will introduce three to four wines from selected regions every Thursday at Meritage. Chef Bruce will prepare tasting spoons or small bites to pair perfectly with each wine offering.
