When you think about what defines the fall season, it’s clear that Boston has it all. It’s time for “Back to School,” and here at the Boston Harbor Hotel, we experience this ritual annually, as many families stopped in for a visit when they brought their children to the many neighboring college campuses and prep schools. We will welcome these families’ return for upcoming Parents Weekends scheduled at campuses all around town.
Many of Boston’s universities field very competitive teams which results in weekends busy with sporting events and homecoming festivities. There are some big college football games scheduled to take place in Boston this fall. Notre Dame / Boston College brought both Fighting Irish and Eagles fans to the hotel this month, and Harvard / Yale’s 127th game is set for the weekend before Thanksgiving. And the world renowned crew regatta, the Head of the Charles, will flood the city with spectators and participants soon. Fans also can fill their calendars cheering on Boston’s world champion professional franchises. We are hopeful that the New England Patriots will have a good season, and the Celtics, with new addition, Shaquille O’Neill, are back in business. In terms of the Red Sox, well, at least we can look forward to next year.
Come and spend some time with us. We have some special events scheduled this fall. This Halloween at our annual Spooky Tea at the Rowes Wharf Sea Grille, we will invite children to Trick or Treat at the hotel. We also have launched a new seafood and beverage tasting series at the bar at the Sea Grille on Monday nights called First of the Season. If you are one of our many Rowes Wharf Bar regulars, hopefully you are enjoying the new beer offerings which include a number of specialty crafted brews and our new Scotch menu—it’s the most extensive Scotch list in Boston.

The restaurant celebrates the hotel's unrivaled waterfront location. Chef Daniel Bruce, executive chef at the Boston Harbor Hotel for more than twenty years, has created a menu that features the freshest seafood, simply but artfully prepared. The harbor directly outside the windows of the Rowes Wharf Sea Grille leads to some of the richest fishing regions in the world. The menu will changes frequently to reflect the best of the local catch as well as a selection of meat and vegetarian dishes.
Champagne Poached Pemaquid Oysters with a Caviar Sabayon
| For Oysters |
| Ingredients |
| 12 ea. |
Pemaquid Oysters (can substitute any fresh oyster) |
| 12 ea. |
Small Spinach Leaves |
| 1 c. |
Champagne (any dry Champagne) |
| Procedure |
| Shuck oysters, remove from shell. |
| Reserve and clean bottom shell. |
| Place oyster liquid in saucepan with Champagne and heat to simmer. |
| Add oysters, poach lightly approximately 2 minutes. (Be careful not to over poach as oysters will toughen) |
| Place one spinach leaf on each oyster shell bottom. Top with oyster. |
| For Sabayon |
| Ingredients |
| 4 ea |
Egg Yolks |
| ¼ c. |
Champagne |
| 1 oz. |
Caviar (Osetra or any sturgeon caviar) |
| Procedure |
| Reduce poaching liquid to ¼ cup, add to egg yolks and whisk briskly over double boiler until soft ribbon. (Mixture will lighten in color and thicken.) |
| Be careful not to overheat edges, as eggs will scramble. |
| Remove from heat, stir in champagne and spoon over each oyster. |
| Garnish each with spoon of caviar. |

First of the Season
The Rowes Wharf Sea Grille, the acclaimed harborfront restaurant at the five star Boston Harbor Hotel, is pleased to announce its new weekly tasting event, First of the Season. Every Monday evening from 5:30 p.m. to 7:00 p.m., come sample three to four tastings featuring the day ’s freshest seafood and local, seasonal ingredients, accompanied by a perfectly paired cocktail, beer or wine selection. Every week Chef Daniel Bruce will select a theme that reflects the freshest catch and the freshest ingredients of the season. First of the Season will be held at the Bar at the Rowes Wharf Sea Grille, featuring breathtaking views of Boston Harbor in a sophisticated, sleek, nautical atmosphere. First of the Season is $20 per person and began on Monday, September 27, 2010.

Imperial Port Wood Finish Scotch
Imperial Port Wood Finish is a golden, light-bodied Scotch made in the Speyside region of northern Scotland. It was developed in 1898, the same year as Queen Victoria’s Diamond Jubilee, which is no doubt from where the name comes. This exemplary Scotch spends its final two years of aging in Port casks which impart spicy and fruity characteristics. There are aromas of earth and spice. On the palate, you taste rich fermented fruits with spicy flavors and a hint of cedar wood.
Many Scotch lovers believe that a great single malt Scotch should be drunk on its own. However, adding a touch of still water enhances the aroma and flavors. Adding this bit of still water also prevents the strength of the Scotch from numbing the senses so as to better enjoy its characteristics.
