Our holiday tea is a celebration for everyone. Enjoy a traditional three-tiered tray filled with tea sandwiches, cakes, breads and scones. There is Champagne for the adults and cupcake decorating for the children. Entertainment is provided by a harpist Friday – Sunday every week.

A Recipe from Daniel

Pan Roasted Block Island Swordfish in a Riesling, Ginger, Carrot and Coconut Broth

YIELDS 4

Ingredients
4 ea. 6 oz. Swordfish Medallions
1 tsp. Salt
1 tsp. Clarified Butter
½ Cup Riesling
½ Cup Fish Fumet
1 Cup Carrot Juice
¼ Cup Coconut Milk
1 ea. Stalk Lemon Grass
½ tsp. Honey
Salt to Taste

Procedure
In sauce pan bring to boil Riesling, fish fumet, carrot juice, coconut milk and lemon grass.
Let simmer for 20 minutes or until ½ liquid remains, stir in honey and salt to taste.
Heat nonstick pan over high heat and add butter.
When hot add seasoned swordfish medallions and sauté to a golden brown, remove and place onto paper lined baking sheet.
Place into preheated 350 degree oven for 5 minutes, remove and place in bowl over choice of steamed oriental vegetables and ladle broth around fish.
Serve.
