Chef Daniel Bruce, executive chef at the Boston Harbor Hotel for more than twenty years, has created a menu that features the freshest seafood, simply but artfully prepared. A Recipe from Daniel

Pan Fried Soft Shell Crab, Tomato, Green Onion and Asparagus Salsa

YEILD 2 PP

Ingredients
2 each prime or similar sized soft shell crab (cleaned)
2 each prime or similar sized soft shell crab (cleaned)
½ cup milk
2 tsp. cornmeal
2 tsp. flour
¼ tsp. paprika
Salt and pepper to taste
2 Tbs. olive oil
½ bunch green onions, finely chopped
½ bunch green asparagus, blanched
1 Tbs. chopped parsley
¼ cup champagne
1 tsp. olive oil
4 each red pear tomatoes cut in halves
4 each yellow pear tomatoes cut in half
Salt and pepper to taste

Procedure
In bowl add milk and soft shell crabs, let sit ½ hour refrigerated. In another bowl combine flour and cornmeal, season to taste. Place crabs in flour mix to coat. Heat non stick sauté pan over medium heat, add 2 Tbs. oil, when hot add crabs and sauté until golden brown both sides.

In small bowl combine asparagus, tomatoes, green onions, 1 tsp. oil, champagne and season to taste. Serve crab topped with salsa.
